Ingredients

• 2 tbsp instant coffee granules
• 2 tbsp Sugar
• 2 tbsp very hot water
• 400 ml cold milk (any kind)
• 1 handful ice cubes

Method

1. Put the coffee, sugar and hot water in a bowl.
2. Whisk with an electric hand mixer for 2–3 min (or by hand for much longer), until it turns pale golden, thick and holds stiff peaks.
3. Fill two glasses with ice and pour in the milk, leaving room at the top.
4. Spoon the whipped coffee over the milk and serve with a spoon or straw to stir it in.

Tips

• It only works with instant coffee; less sugar makes a looser, less stable foam.
• Use oat or soy milk for a dairy-free version.
