Ingredients

Method

  1. Put the cassava in a pot of cold water with 1 tsp salt. Bring to the boil and simmer for 20–25 min, until fork-tender and starting to split open.
  2. Drain, then pull out and discard the woody string running through the centre of each piece. Arrange on a warm dish.
  3. Heat the oil in a small pan over medium heat and cook the onion for 3 min, until it softens. Add the garlic and cook for 1 minute, without letting it brown.
  4. Take the pan off the heat and carefully add the orange and lime juice, cumin, oregano and the remaining salt (it will spit).
  5. Pour the hot mojo over the yuca and serve at once.
