Ingredients

Method

  1. Lightly oil four small glasses or moulds, or just use serving glasses if you won't turn them out.
  2. Whisk the coconut milk, maple syrup, vanilla, salt and agar in a small pan until smooth, with no lumps of powder.
  3. Bring to the boil over medium heat, whisking, then let it bubble gently for 2 min. Agar only sets once it has properly boiled.
  4. Pour into the glasses, leave for 10 min to cool a little, then chill until set, about 2 hours.
  5. For the sauce, warm the berries and maple syrup in a pan over medium heat for 5–6 min, until the fruit softens and turns jammy. Cool slightly.
  6. Turn out the panna cottas (dip the moulds in hot water for a few seconds) or serve in the glasses, spooned over with berries and topped with mint.
