Ingredients

Method

  1. Heat your waffle iron. Whisk the flour, sugar, baking powder and salt in a large bowl.
  2. In a jug, whisk the egg yolks, milk, melted butter and vanilla. Pour into the dry ingredients and stir just until no dry flour remains; a few lumps are fine.
  3. Whisk the egg whites in a clean bowl until they hold soft peaks, then gently fold them into the batter. This is what makes the waffles light.
  4. Lightly oil the iron, ladle in enough batter to just fill the grid and close the lid. Cook for 4–5 min, until golden and crisp and the steam has mostly stopped.
  5. Keep cooked waffles warm in a single layer on a rack in a low oven (120°C, 100°C fan, 250°F) while you make the rest. Serve with butter, maple syrup and berries.
