Ingredients

Method

  1. Heat the oven to 180°C (350°F) and line a baking tray with baking paper. Stir the panko into the milk and leave for 5 min to soften.
  2. Add the beef, onion, garlic, eggs, ketchup, Worcestershire, thyme, parsley, salt and pepper. Mix gently with your hands until just combined; overworking makes it dense.
  3. Shape into a loaf about 23 × 12 cm on the tray. Stir the glaze ingredients together and brush half over the top and sides.
  4. Bake for 40 min, then brush with the rest of the glaze and bake for 20–25 min more, until the centre reaches 71°C (160°F) and the glaze is sticky.
  5. Rest the meatloaf for 10 min before slicing so it holds together. Serve with mashed potatoes and green beans.
