Ingredients

Method

  1. Line a 20 cm square tin with baking paper, leaving some hanging over the sides to lift the fudge out later.
  2. Put the chocolate, condensed milk and butter in a heavy pan over low heat. Stir constantly for 4–5 min, until just melted and smooth. Keep the heat low so the chocolate does not scorch or turn grainy.
  3. Take off the heat and stir in the vanilla, salt and nuts, if using. The mixture will be very thick.
  4. Scrape it into the tin and smooth the top with an oiled spatula.
  5. Chill for at least 3 hours, until firm. Lift out and cut into small squares with a hot, dry knife.
