Cheese Buldak (Fire Chicken with Melted Cheese)

Chicken in a seriously hot chilli glaze under a blanket of stretchy mozzarella. Seoul’s favourite way to suffer, happily.

Korean · Mains · prep 10 min · cook 20 min · waiting 15 min · serves 3 · Nut-free

Ingredients

Method

  1. Mix the fire sauce in a bowl, add the chicken and turn to coat. Leave it for 15 min while you slice the onion and grate the cheese.
  2. Heat the oil in a frying pan with a lid over medium-high heat. Add the chicken and onion and cook for 8–10 min, stirring often, until the sauce is thick and the chicken is cooked through to 75°C (165°F).
  3. Stir in the chilli if you dare. Spread the chicken in an even layer, scatter the mozzarella over the top, cover and cook on low for 3–4 min, until the cheese melts.
  4. Scatter with spring onion and bring the pan to the table with rice, steamed eggs and something cold to drink.
