Ingredients

Method

  1. Boil the potatoes in salted water for 15–20 min until completely tender. Drain, let them steam dry for 2 min, then mash with the butter and milk until smooth. Season well.
  2. Meanwhile, put the milk, onion and bay leaves in a wide pan and bring just to a simmer. Add the white and smoked fish, cover and poach gently for 4–5 min until just opaque. Lift the fish into a baking dish about 20 × 30 cm and strain the milk into a jug.
  3. Melt the butter in the same pan over medium heat, stir in the flour and cook for 1 minute. Gradually whisk in the warm poaching milk and simmer for 3–4 min, whisking, until smooth and thick enough to coat a spoon.
  4. Take the sauce off the heat and stir in the mustard, parsley, lemon zest and plenty of pepper. Taste before adding salt, as smoked fish is salty.
  5. Heat the oven to 200°C (180°C fan, 400°F). Scatter the raw prawns, eggs and peas among the fish, pour over the sauce and gently mix. Spoon the mash on top, spread it to the edges, rough it up with a fork and scatter with cheese.
  6. Bake for 30–35 min until the top is golden and the sauce bubbles at the sides. Rest for 5 min before serving with greens.
