Ingredients

Method

  1. Put the blackcurrants, sugar, lemon zest and juice and the water in a pan over low heat, stirring until the sugar dissolves.
  2. Bring to a simmer and cook for 5 min, squashing the berries with a spoon, until they have all burst and released their juice.
  3. Pour through a sieve lined with muslin, pressing gently to extract the syrup. Discard the skins.
  4. Pour into a sterilised bottle and keep in the fridge. Dilute about 1 part cordial to 5 parts still or sparkling water, or hot water on a cold day.
