Ingredients

Method

  1. Mix the soy sauce, calamansi juice, garlic and pepper, toss with the beef and marinate for 30 min (or up to a few hours in the fridge).
  2. Heat the oil in a wide frying pan over medium-high heat and fry the onion rings for 2 min until just softened but still with some crunch. Lift them out.
  3. Lift the beef from the marinade (keep the marinade) and sear it in batches in the same pan, about 1 minute per side, until browned.
  4. Return all the beef, pour in the marinade and water and add the sugar (if using). Simmer for 5–8 min until the beef is tender and the sauce has reduced a little.
  5. Taste, adding more calamansi for sharpness, then pile the onion rings on top. Serve with lots of rice to soak up the sauce.
