Ingredients

Method

  1. Slice the bananas into 2 cm coins and spread them on a lined tray in a single layer. Freeze for 4 hours, until solid (or keep them in a freezer bag for whenever the craving hits).
  2. Tip the frozen banana into a food processor and blend. It will go crumbly, then lumpy, then suddenly turn smooth and creamy like soft-serve; this takes 3–5 min, with a few stops to scrape down the sides.
  3. Only add a splash of milk if the machine is really struggling. Add the vanilla, salt and any flavourings and pulse to mix.
  4. Eat straight away as soft-serve, or pack into a tub and freeze for 1 hour for scoops.
