Ingredients

Method

  1. Cover the almonds with boiling water and soak for 30 min. Slip off the skins.
  2. Blend the almonds with 4 tbsp of the milk to a fine paste.
  3. Bring the rest of the milk to the boil in a heavy pan, then simmer for 8–10 min, stirring often, until slightly reduced.
  4. Stir in the almond paste, saffron milk, sugar and cardamom and simmer for 5 min more, stirring so it doesn’t catch.
  5. Serve hot, or cool and chill it for a summer drink. Scatter with pistachios.
