Ingredients

• 90 ml prosecco, well chilled
• 60 ml Aperol
• 30 ml soda water
• 1 slice orange slice
• Ice

Method

1. Fill a large wine glass with ice.
2. Pour in the prosecco first, then the Aperol (this order stops the Aperol sinking to the bottom).
3. Add the splash of soda water and stir once, gently, to keep the bubbles.
4. Tuck the orange slice into the glass and serve straight away.

Tips

• Remember 3-2-1: three parts prosecco, two parts Aperol, one part soda. It is one of the lighter cocktails; more soda makes it lighter still.
