Ingredients

Method

  1. Put the water, pandan, monk fruit (shell and flesh) and dried longan in a pot, bring to the boil, then cover and simmer for 15 min.
  2. Add the winter melon and rock sugar and simmer covered for another 15 min, until the melon turns translucent and the drink is amber.
  3. Turn off the heat and leave covered for 1 hour so the flavours deepen. Taste and add more sugar if you like.
  4. Discard the pandan and monk fruit shell. Serve over plenty of ice with some longan and melon strips in each glass.
